Tea smoked duck

Alas! Another failure. I love tea smoked duck, but this one didn't quite make the grade. The duck was beautiful, succulent, and the texture excellent, but the flavor just wasn't what I was looking for. I suspect that the spices used in the smoking packet are to blame (a recipe I found on the net). Once I find a successful preparation, I will post the recipe.

The duck in a V-rack, ready to be steamed.

Tea, spices, and sugar in a foil packet. With holes poked in the top, the packet is placed on the coals to provide the "tea smoked" flavor.

The steamed duck threaded onto the Kamado's meat hook.

Hanging in the Kamado, with some vegetables for roasting.

The finished bird. Beautiful, no?

Looks great; it just didn't meet expectations in the flavor department.
