Smoked salmon

A specialty of the Pacific Northwest, this smoked salmon is the equal of any that I have purchased, and it's much less expensive. It also freezes well.

Some smelt that I smoked at the same time.

One half of the salmon, after brining and drying. Ready for the smoker.

The other half of the salmon, with a copius amount of freshly cracked pepper (our favorite).

Finished smelt make great snacks, but these were a little too big, making the bones hard to chew up.
