Wet Rub With Rosemary

An excellent rub for roasted or grilled lamb.

1 Tablespoon Rosemary, Fresh, -Ground
-Minced 1 Tablespoon Extra Virgin Olive Oil
1/2 Teaspoon Kosher Salt 1 Tablespoon Lemon Juice, Freshly
1/2 Tablespoon Black Pepper, Fresh -Squeezed

Combine rosemary, salt & pepper in a mortar or molcajete. Grind with the pestle until rosemary is well crushed, and spices are thoroughly combined. Transfer to a small bowl, and combine with lemon juice and olive oil. Allow to sit at least 15 minutes to blend flavors, then brush or spoon over meat.
