Beer can chicken—the
first try I've read so much about this way of cooking chicken, I
just had to try it in the Kamado. I turned to Cook's Illustrated "Grilling
and Barbecue" for instructions. The Cook's Illustrated recipe called
for their
"simple dry spice rub for poultry." I had tried this dry rub once
before and determined that it
wasn't to my liking, but like a fool, I decided to give it another chance. At any rate, preparing this dish was a kick, and the
chicken was succulent. Unfortunately, the spice rub destroyed the effect for
me. I'll try this one again, but next time with different seasonings. |
